Kiwi Cucumber Cooler

Ingredients

  • 1 cucumber
  • 2 kiwi fruit
  • 50 mint leaves
  • 3 tablespoon sugar
  • 1 lemon
  • 0.5 teaspoon chia seeds (optional)
  • 1 can tonic water
  • 30 ml gin per drink (optional)

Directions

  1. Soak the chia seeds in two tablespoons of water.
  2. Peel the cucumber and the kiwi, and cut them into small pieces. Ensure that the cucumber is not overripe and seeds are soft.
  3. Blend the cucumber in a mixer. When the cucumber is well-blended, add kiwi, mint leaves, lemon & sugar.
  4. White sugar can be replaced with 1 tablespoon honey.
  5. Pour the juice in a glass and add soaked chia seeds, ice and top it up with tonic water.
  6. Chop the second kiwi into small pieces and use for garnishing.
  7. For the cocktail, do not add chia seeds and add gin instead.
